Not a big deal since you caught it right away... It's worth a call to the dealer to make sure the tech is being more careful with oil levels so he doesn't get himself fired.

As far as going back there, it's up to you. The dealer we bought the Sonata from 10 years ago does free lifetime oil changes, so they've done every oil change on it. Almost every time I take it, before I get in the car to leave they pop the hood and show me the oil level.

what does the Gen2 3.6 Traverse take in oil?
6 qts?
Could be he dialed up traverse- and put in what the early Gen1 took, 5.5 qts.???
My '14 shows 6 for a filter and oil change... I guess they revised that with the '13 refresh to help with the timing chain issues?

I have had it happen to me a couple times and I always let the service manager know about it. So I always check before living dealer . You might want to also mark your tires if you have them rotated. I believe a lot of dealers do this. If they save one quart of oil per change they have made more profit. Most people trust the dealer and wont check. And 10 to 30 oil changes a day really adds up the $
I'm sure there is a service department somewhere that operates this way, but the franchise dealer owner would certainly not take that risk. Replacing engines or having insurance claims against their service department is certainly not more profitable in the long run.

I just changed the oil and filter on my 2019 3.6. I bought it used with 15k on it and it's at 23k now. The Chevy dealer where I bought it Certified it and claimed to have done an oil change on it before delivery and put a sticker on the windshield noting the next oil change. I noticed how clean it was all around the engine and suspect that the service wasn't done. seeing how easy it is to reset the oil life on the DIC, what are the chances that no service has ever been performed on this vehicle? The drain plug and filter were very tight and the oil was dirtier than I would expect. Also, I noticed that 6 quarts only brought the level on the stick halfway. I'll continue to monitor it.
Nothing would surprise me at dealer service centers, especially not changing the oil but claiming you did. No implied warranty.
